Cheese Baked Potatoes

Ingredients

  • 6 garlic buds (crushed)
  • 1/2 thick slice capsicum (chopped)
  • 1/2 thick slice orange capsicum (chopped)
  • 1 Medium onion (chopped)
  • 2 whole tomatoes
  • 2 whole capsicum
  • 50g olive oil
  • 10g oregano
  • 10g salt
  • 2-3g pepper flakes
  • 2-3 pieces whole boiled potato
  • 50g cheese grated
  • 100g cream (Amul cream or similar one)

Directions

Pre- Preparation
Step 1 Halve the tomatoes and de-seed them. Slice their base slightly so that they can be placed on flat surface. Sprinkle salt and keep aside for 2-3 minutes so that they soak the salt.
Step 2 Halve the boiled potatoes and hollow them too carefully using a spoon. Slice their base to place them on flat surface. Sprinkle salt and keep aside for 2-3 minutes so that they soak the salt.
Step 3 Now take a pan and saute' garlic and chopped vegetables
Step 4 Add salt to taste. Add cream and grated cheese and cook for sometime. Keep the cooked vegetables aside.
Step 5 Now place the halved potatoes and tomatoes on top of sliced green capsicum.
Step 6 Fill the halved potatoes and tomatoes with the cooked vegtables
Step 7 garnish the top of these halves with lots of grated cheese.
Step 8 Now butter the baking dish
Step 9 Place the potatoes and tomatoes on the baking dish and place the set-up in the OTG @ 180 degree for 15 min
Step 10 Remove the tray once done and serve hot with thousand island dip/tomato ketchup
